Well to be honest I couldn't think of anyhting but I think Fable 2 should (and probably will have anyway) more detailed facial expressions.
For instance.. *ahem*...
When your hero farts, his face should be more scrunched up as it looks like hes really forcing it in TLC and the original but his face stays emotionless. Whats with that!?
